Ideas for what to do during 11 hour layover in IAH

Hello Houstonians, I'm at a bit of a loss here. I've got a 11 hour stopover in IAH and I don't want to spend the whole time at the airport (if I don't have to) but with customs and TSA it's also not enough time to head downtown to see the city.

So does anyone have any suggestions what there is to do in and around George Bush Airport? I'd love to eat some local southern foods and maybe walk around a bit before heading back to the airport.

Or is it just more convenient to stay at the airport and bunker in in a sky lounge for that time.

And bonus question: what wait times should I expect from this airport? I'm flying in from Europe and out to Central America
