You Have 48 Hours in Houston What do you do and where do you stay?

We are going to be visiting Houston for a weekend. It will probably be our only time there. I know I would like to visit Spindletap Brewing but have no plans other then that. We would love to try some great local restaurants and probably visit the Galleria for some shopping. What restaurants would you recommend and what hotels or areas to look for a hotel in. We will have a car so we will be able to drive. This would probably be next weekend.
