Viet food that’s not just pho/banh mi that I can’t get in Dallas

Hey guys, I’m in town for a concert and leaving tomorrow. Looking for a lunch spot tomorrow (don’t mind stopping by multiple in Bellaire if need be) for some speciality Viet or knock your socks off Viet.

Stuff like good banh khot, banh cuon, banh it tran, or whatever you think is worth visiting as a Viet guy from Dallas.
